YEAST: Wild Saccharomyces, Wild Brettanomyces, Wild bacteria, Cote De Blanc
A golden sour inoculated with wild yeast by resting on L’acadie grape skins from our friends at Whispering Horse Winery. After spending nearly 6 months on grape skins this beer lacked acidity, so it was blended with a single wine barrel willed with a sour ale that was again on grape juice from table grapes grown on our farm. The resulting blend is a complex funky sour ale with notes of stone fruit, rose hips, and grape skin.
